About Ais Kacang
Ais kacang — literally "bean ice" — is the maximalist counterpart to cendol. A mountain of finely shaved ice is doused with rose syrup, evaporated milk, palm sugar and pandan, then loaded with toppings: red beans, sweet corn, grass jelly, cendol strips, peanuts and sometimes ice cream. The result is a colourful, overstuffed bowl that cools you down and satisfies a sweet craving simultaneously.
The best ais kacang stalls shave their ice to a snow-fine texture rather than crushing it into chunks. Look for stalls with high turnover — the ice stays finer when the machine runs continuously.
